The grapes come from Côteaux du Gennoix, north of Sancerre, and the Cher Valley in Eastern Touraine.
Harvest & Vinification
Manually harvested grapes are gently pressed and macerated in vats for three days. The fermentation continues in vats until bottling using native and neutral yeast.
