Produced from a 6.18 hectare plot of old, deeply-rooted vines planted, on average, in the early 1970s within the prestigious Domaine du Rochoy vineyard. Organically farmed and on a slope overlooking the Loire river, the vineyard is located in the commune of Bannay.
Harvest & Vinification
Racked at low temperature, 50% of the wine ferments for 10 days in stainless steel tanks at temperatures ranging from 15° to 20°C (59° to 68°F) and the other 50% ferments in oak barrels. Native yeast, no malolactic fermentation, and matured on its fine lees for one year before it is vacuum-bottled (exclusively in darkly tinted bottles), followed by six months in the bottle.
