The Comtesse is planted on a prime south-facing marly and chalky slope in the village of Chavignol from vines planted, on average, in the mid 1980s. La Comtesse is a lieu-dit within La Côte des Mont Damnés.
Harvest & Vinification
Manually harvested grapes are racked at low temperature, then fermented for 10 days in 90% stainless steel tanks/10% neutral oak at temperatures ranging from 15° to 20°C (59° to 68°F). Native yeast, no malolactic fermentation, and matured on its fine lees for five months before it is vacuum-bottled (exclusively in darkly tinted bottles), followed by one month in the bottle.
