From a 0.1403 hectare parcel situated in the lower parts of the village of Volnay.
Harvest & Vinification
Grapes are manually harvested, using small, open crates in order to avoid the grapes being compressed and the first juice being damaged. The crops are 100% de-stemmed. Fermentation with native yeasts and maceration take place in wooden vats for 15 to 20 days on average. The ageing process lasts for an average of 18 months.
