Harvest & Vinification
Grapes are harvested at night to preserve freshness. Direct press for a slightly extended time to allow for some maceration and color extraction. Static cold settling for a day then racked and 13-15C for fermentation that continues until wine is sugar dry. All done in concrete and stainless steel tanks.
