Selection massale only for replanting. Biodynamic practices in the vineyard, with emphasis on biodynamic preparations 500 and 501. Stopped cutting the apex growth in 2018.
33% Grenache Blanc, 30% Clairette, 26% Marsanne, 11% Chardonnay
Harvest & Vinification
Manual harvest in 15 kg boxes. Whole bunch pressed. Natural settling at approximately 10°C. Alcoholic fermentation in 228-liter barrels, with each variety separate, at a temperature between 18°C and 20°C. Aging on fine lees for 12 months with stirring. Assemblage at bottling.
