Organic farming with adherence to the biodynamic calendar. From Saint-Saturnin and Saint-Jean-de-la-Blaquière. The Roussanne was planted in the 1990s. The Chenin plot is named Cargadous and was planted in the mid-1970s. Average yield 25hl/ha.

Harvest & Vinification
Whole cluster press, débourbage (natural settling of must) at 12°C before fermentation in barrels. Aged 11 months in 500 L barrels and barrique (228 L) followed by four months in stainless steel tanks. Minimal SO2 at bottling.
