Harvest & Vinification
The grapes are 100% destemmed before punch down. Long maceration for 30 days with micro-oxygenation under the cap. Malolactic fermentation occurs in the vat. Aging in barrels and foudres (large oak vats) for 12 months (30% new, 70% in one-and two-year-old barrels), followed by six months in vats with lees stirring. No fining or filtration.
