From the Quinta de Baixo estate, the Vinhas Velhas is the result of combining the varieties from very old vineyards, 80-100 years of age. Due to the high natural acidity, these vineyards give rise to wines with a pH below 3.0.
Harvest & Vinification
The grapes are manually harvested, then fermented in stainless steel vats for four weeks. Fermentation in 1000 L fuders (60-year-old barrels sourced from the Mosel), which is where it also went through malolactic fermentation and a maturation period of 20 months. The wine was bottled unfiltered.
