The vineyard is over a limestone bedrock that grants minerality to the wines. The topsoil is clay, which contributes complexity and structure.

Harvest & Vinification
100% destemmed. Direct grape crushing, very softly. Partial fermentation in stainless steel vats with indigenous yeasts. Aged on the lees in stainless steel tanks, then bottled before fermentation is complete. The bubbles form naturally in the bottle. Minimal filtering after 2/3 of the fermentation. No sulfites added.
