Kalin Cellars remains one of California’s best-kept secrets, and the reason is beautifully simple: Drs. Terry and Frances Leighton never released a bottle until they were ready to drink. Founded in 1977 by these two microbiologists, Kalin was a true outlier—producing just 7,000 cases annually with a philosophy that patience always trumped profit.

While other wineries chased quick releases and trends, the Leightons brought scientific rigor to winemaking that was revolutionary for its time. Slow fermentations, extended sur lie maturation, and barrel aging that stretched over a decade were all aimed at developing profound complexity. As Terry once put it, “For the first five to ten years, white wines like ours taste of nothing—like Perrier water—so ageing them is essential.”
