Less than one hectare, the André Péalat St. Joseph was named after the vineyard's previous and talented owner when Gilles Robin purchased the property in 1999. The St. Joseph is Gilles' most limited wine, with just 2,000 bottles produced. Located in the cradle of the appellation, the Syrah vines were planted in 1966, on a hill with steep, southeast-facing slopes. Vineyards are managed with respect for the land with plowing and weeding. Organic plant-based fertilizer and compost are used to support microbial life for release of nutrients in the soils.

Harvest & Vinification
Grapes are manually harvested and de-stemmed, then macerated for 32 days before being pressed in a 120-year-old basket press, originally owned by Gilles' grandfather. The wine is then aged in oak barrels for 12 months, one to two year-old barrels.
