Harvest & Vinification
The grapes are harvested entirely by hand and undergo a second sorting at the winery. The grapes undergo carbonic maceration in stainless steel tanks for approximately 5 days, without addition of yeasts or sulfur. The wine rests in stainless steel tank until bottling the spring of following year.
