Made of ungrafted Gamay de Bouze, a rare teinturier varietal traditionally planted in the Cher Valley in the 19th century up until the 1970s. The grape takes its name from the Burgundian village of Bouze.
Soils
Flinty, clay soil, with very little earth; deep siliceous sands on clay
Harvest & Vinification
The grapes are manually harvested with a second sorting at the winery. The grapes undergo carbonic maceration in stainless steel tanks, without the addition of yeasts or sulfur. The wine rests in stainless steel tank until bottling in the spring of following year.
