En Chiveau is in the Combe de Pommard. Exposed east-north-east and a bit cooler so the ripening is slow. Vines are trained 1/3 Cordon de Royat and 2/3 Guyot.

Harvest & Vinification
Grapes are hand harvested and sorted in the vineyard. Pneumatic pressing. Partial whole cluster fermentation lasts 14-18 days. Aged in barrels (30% new).
