Harvest & Vinification
The sweetness of this Quarts de Chaume comes from botrytis or what the French call passerillage. Rather than being infected by noble rot, the natural sweetness of the grapes is concentrated by allowing them to dry on the vine through an extended harvest. The grapes are carefully hand-picked and strictly sorted. Fermentation takes place in barriques, the wine is then matured for 18 months in oak barrels.
